To make tomato catsup (or ketchup), boil fully ripe tomatoes in their juice until fairly thick. Pass through fine cheesecloth and add salt to taste. Add cloves, pepper, nutmeg and/or other herbs and spices to taste.

An alternative for people who prefer a sweeter, less sour taste, is banana ketchup. This can be found in the Philippines.
